When my family went on holiday to Athens, we had breakfast in a cafe one morning and came across these pancakes. At first, we thought it seemed like a very odd combo, but the waitress in the cafe assured us that feta is perfect in pancakes. We took her word for it, and oh boy was she right!
When we got back home, I went straight to the shops, bought some feta, and tried recreating the pancakes with a few nutritional tweaks.
Everyone loved them, so I thought I'd share them with you, too!
For about four people, you'll need:
3 eggs
half a pack of feta, so about 100 grams cut into cubes, or crumbled
1 tbsp flaxseeds
200g self raising flour (you can also swap half of this for wholemeal flour, but then you'll also need to add 1 tsp of baking powder)
200ml milk of choice
1 tbsp honey
You will also need a little oil for cooking (I tend to use coconut oil)
Method:
Mix all ingredients together
Use your pan of choice and put it on medium/high heat.
Melt a little oil in your pan, and use a small ladle or large tablespoon to pour a little batter into the pan. I fit about three pancakes in my pan.
Fry them on one side until the top of the pancakes has set, then flip them over.
Fry them for another minute or so on the other side, and then put aside on a plate while you fry make the other pancakes.
These pancakes are amazing with a little honey drizzled on top, but we love them with anything from a tonne of fruit on top, to berries, to peanut butter. The choice is yours, really!
