This granola will be enough for about four breakfasts unless you're ridiculously hungry!
Ingredients for granola:
- 150g steel cut oats
- 50g linseeds
- 50g chia seeds
- 100g walnuts
- 100g almonds
- Peanut butter
- 3-5 tbsp maple syrup
- A pinch of salt
- ½ tsp of spice of choice, such as cardamom or cinnamon
Toppings
- Half a banana sliced
- 3 tbsp Greek yoghurt, or coconut yoghurt if dairy free option needed
- A large handful of mixed dark berries (frozen are fine, just thaw them before you use them)
Method:
1. Roughly chop the almonds and walnuts and add to a frying pan with the rest of the dry ingredients.
2. Fry all the ingredients in a dry frying pan for a few minutes until it starts smelling nice.
3. At this point, add the spice you’ve chosen.
4. Take it off the heat and leave it to cool for a few minutes.
5. Now add the maple syrup and peanut butter, mixing it all well and then add the salt.
6. Leave it to cool completely and then pour it into a lidded jar if storing for later.
7. If you want to eat it straight away, pour the desired amount (I suggest just under 100g) into a bowl, top with the yoghurt, sliced banana and the mixed berries and tuck in!
Toast the oats, seeds and nut in a dry frying pan until it starts smelling really nice.
