For 2 generous portions you'll need:
For the porridge:
100g porridge oats
50g chia seeds
500ml coconut milk
160g frozen forest fruit berry mix (or use blackberries if you can't find the mix)
30g smooth or crunchy peanut butter
1 tbsp raw cacao
For the topping (all optional):
1 banana sliced
A drizzle of honey, maple syrup, or date syrup
1ts cacao nibs (great for a bit of crunch)
Kefir (coconut is my favourite, but dairy is fine, too)
Method:
Add all porridge ingredients in a pan, and bring to the boil.
Simmer on a low heat, whilst stirring, for 10-15 minutes.
Add a little more milk if needed.
Serve in two bowls and top with your toppings of choice.
A tip for the lazy:
Make it as overnight oats. Simply mix the ingredients together, put in a tub, and store in the fridge overnight. If you like your porridge warm, simply heat it up the following morning and add the toppings after. Simples!
